Brasserie Fouquet's, a cornerstone of French culinary heritage since 1899, expanded its storied legacy to New York City with its first U.S. location in Tribeca. Situated within the luxurious Hotel Barrière Fouquet's New York, this new outpost continues the tradition of refined dining established by its flagship on the Champs-Élysées in Paris and echoed in international locations like Marrakech, Dubai, and Cannes. Helmed by Michelin-starred Chef Pierre Gagnaire, this venture marks the celebrated chef's inaugural presence in New York, setting a high bar for translating French gastronomy to a new audience.

Barrel Aged Management (BAM) was instrumental in adapting the iconic Parisian brand to meet New York’s expectations while preserving its French roots. BAM collaborated with Groupe Barrière to refine the menu for the U.S. market, balancing traditional dishes like foie gras and escargots with seasonal offerings that appeal to local palates. BAM also played a key role in recruiting and training top-tier culinary and service talent, ensuring the seamless integration of French elegance with the energy and standards of New York hospitality.

Additionally, BAM advised on operational strategies and design refinements, carefully blending Fouquet’s signature Parisian aesthetic with the architectural character of Tribeca. These efforts ensured that the restaurant feels both authentically French and uniquely New York, making it an inviting destination for locals and visitors alike.
